It’s funny, my family has never really had much leftover turkey after Thanksgiving. We would have tons of sweet potato casserole with delicious pecan streusel, buttery mashed potatoes, and multiple varieties of stuffing. Plus, Grandma would make enough pie for each family to take home an entire leftover pie. We would have pumpkin, cherry cheese, and apple. However, the one leftover we never really had much of was turkey. Probably because everyone scarfed it down during dinner.
Nevertheless, the rest of Americans seem to require recipes that transform their now boring Thanksgiving turkey leftovers into something new and delicious.
White Turkey Chili
Shred up your leftover turkey and use it in place of the chicken in your favorite white chili recipe. Combine onions, garlic, green chilies, spices, chicken stock, cannellini beans, and shredded turkey. Also, I like to serve chili with a toppings bar. Include things like shredded cheese, sour cream, pickled jalapenos, fresh cilantro, and a big bag of tortilla chips.
Turkey Noodle Soup
First sauté onions, carrots, celery, and garlic in olive oil or butter. Next, add in your leftover shredded turkey, chicken stock, and a bay leaf. Season well with salt and pepper. Serve with noodles.
Turkey Enchilada Casserole
First sauté onions and garlic in olive oil until soft. Add in spices, leftover shredded turkey, and green chilies. Next, in a baking dish layer enchilada sauce, tortillas, cheese and turkey mixture. Keep layering until you reach the top, making sure that the last layer is cheese. Bake until the cheese is melted and bubbly.
Turkey Cuban Sandwich
This is one of the easiest recipes. You only need bread, Swiss cheese, mustard, and pickles. Spread the mustard on both sides of bread, then add a slice of Swiss on each side, layer on the pickles, and the shredded turkey. Spread butter on the outside of the bread. Next, bring a skillet to medium low heat. Place the sandwich in the skillet and smash it down with another heavy skillet. By weighing the sandwich down, it will get nice and brown. Cook until the sandwich is golden brown on both sides and the cheese is melted.
