My husband swears soup is not a meal…
He gets so frustrated when I say we are having soup for dinner. That statement is always followed by, “So, what are we having with it?”
However, I, on the other hand, DO consider soup to be a meal. But, it does need to be hearty and be accompanied by a salad and/or bread, of course. And, once the weather starts to cool down and the breeze is nice and consistent – when spring time comes – soup is the perfect meal. Plus, most of the time, you can make it in the crockpot so it is ready as soon as you walk in the door from work…

This has to be my favorite on the list – I mean, how could you say “no” to something with carnitas in it? This soup is diverse in the flavors and will warm your belly and your heart. Add some fresh lime and avocado, and WOW – you will be begging for seconds.
